Pumpkin Puree 3 Ways

Pumpkin Puree


1 small jap pumpkin

Cut into pieces and roast on 180 degrees for 30 minutes or until soft

Wait to cool

Puree in Thermomix

Speed 4.5 for 20-30 secs





Muffins (or Bread)

Ingredients:


⅓ cup vegetable oil

½ cup maple syrup or rice malt syrup

2 eggs, at room temperature

1 cup pumpkin purée

¼ cup lactose free milk

2 tsp ground cinnamon

1 tsp ground ginger

1/2 tsp ground nutmeg

1/2 tsp ground allspice

1 teaspoon baking soda

1 tbsp apple cider vinegar

1 teaspoon vanilla extract

½ teaspoon salt

1 ¾ cups low fodmap flour

⅓ cup oats, plus more for sprinkling on top


Method:

Pre-heat oven to 165 degrees

Add wet ingredients (except apple cider vinegar) to the mixing bowl

Mix 20 secs, speed 3.5

Add dry ingredients (except baking soda) to the mixing bowl

Combine baking soda and apple cider vinegar in a cup

Add to mixing bowl

Mix 30 secs speed 3.5

Pour into muffin cups

Bake 25 minutes

If making Bread

Pour into a bread pan and bake for 55- 60 minutes

Could also sprinkle with extra cinnamon


Pasta



2 tsp. Garlic infused olive oil

Spring onion tops (4 tops)

1/2 Tbsp. diary free spread

1 cup pumpkin puree

2 cups lactose free milk

1 tsp. salt or more to taste

1/2 tsp. cracked black pepper

1/4 tsp. nutmeg

1/4 tsp. cinnamon

Low fodmap pasta or noodles of choice

Method:

Place chopped spring onion tops and oil into the mixing bowl

Cook 4 minutes, 120 degrees, speed 1

Add remaining ingredients

Mix 20 seconds, speed 3.5

Scrap down side of bowl

Bring to the boil

Prepare noodles/pasta as directed

Add sauce to pasta/noodles


Cookies

makes about 50

2 ½ cups low fodmap Flour

½ tsp. baking powder

½ tsp. salt

½ tsp. cinnamon

120g dairy free spread

1 ½ cups sugar + extra

2 tsp. vanilla extract

1 egg

½ cup pumpkin puree

Brown sugar for sprinkling on top

Method:

Add wet ingredients into the mixing bowl

mix 20 secs speed 3.5

Add dry ingredients into the mixing bowl

Mix 40-60 secs speed 3.5 until a dough forms, add extra flour if too wet

Place dough in fridge for 30 minutes

Roll dough into small balls

Place on baking sheet and gently press

Sprinkle brown sugar on top
