Got some leftover vegetables? I had some frozen roast vegetables, (pumpkin, carrot, zucchini and Broccoli).

Added 2 eggs, salt and pepper to taste, 1/4 cup of low fodmap flour, and a handful of grated cheese. Mixed in my thermi for 15 secs on speed 3.5

Fried in the frypan with some garlic infused oil. Served with a couple of chicken Sausages. Yum!
