Lactose Free Yoghurt




Ingredients:


80g lactose free yogurt 1L lactose free milk


Method: Pour the milk into the bowl. Cook 10 minutes / 80C / Speed 2 / MC on.

As soon as this has finished, cook again 15 minutes / 90C / Speed 2 / MC on.

Let this cool down to 36 C (takes 2-3 hours)

Add the yogurt to the milk and mix 30 secs, spd 2.5.

I put this in my Hansells yogurt maker with boiling water, but you could also use the fermentation setting on your thermomix. Leave for 12 hours, then refrigerate.


If you find some watery substance, this is whey, just pour off.

You can then make your own fruit yogurt from this. I've mashed some Berries and added 2 tbsps maple syrup. Then mixed through the yogurt and put in separate jars. Refrigerates for a week.
