If you want to add some protein, you could add firm tofu or eggs. I spiralised my zucchini and carrots
Ingredients: Flat rice noodles 3 spring onion Tops
Sauce: 3 tbsp tamarind paste 2/3 cup (160 g) soy sauce 2 tbsp Lime juice 2 tbsp peanut butter 2 tbsp garlic infused oil 3 tsp minced ginger Chilli flakes to taste 1 zucchini 2 carrots 1 head Broccoli Bean sprouts Chopped peanuts
Method:
Put noodles in thermoserver covered with boiling water, cover and let sit till soft.
Drain noodles once done and return them to the thermoserver
Place spring onions tops into mixing bowl
Chop, 3 secs, speed 7
Add oil, cook 1 minute, 100 degrees, speed 1
Add sauce ingredients into mixing bowl and combine, 10 seconds, speed 5
Stir the sauce in with the noodles and cover
Add Broccoli heads into mixing bowl and chop, 10 seconds, speed 4
Put the Broccoli, spiralised carrot and zucchini into the varoma tray
Put 500g water into the mixing bowl
Cook covered, 15-20 minutes, varoma, speed 2
Check vegetables are cooked
Combine vegetables with noodles, top with chopped Peanuts and bean sprouts.
