Spinach & Potato Salad

Ingredients:

4 large potatoes

1 L water

1/2 bag Spinach leaves

4 tbsp olive oil

1 tbsp Dijon mustard

1 tsp lime juice

1 tbsp capers

1 tsp sugar


Method:

Put water into mixing bowl

Chop potatoes into small pieces and place into the steaming basket (if you have a blade cover, use this instead and cook on reverse without the basket)

Cook, 15-20 minutes, 100 degrees, speed 1.5


Combine all the other ingredients except the spinach together while potatoes are cooking

Once the potatoes are cooked, drain and place all ingredients into a bowl and combine well
