Ingredients:
400g pumpkin 4 large carrots 1 large orange (juiced and zested) 3 vegetable stock cubes 2 cups water 2 tsps minced ginger 1 tsp cumin 1/2 tsp ground coriander 1/2 tsp thyme
Method: Heat oven to 200 degrees Place pumpkin and carrots in sprayed with garlic olive oil and roast till soft. Note: I hate chopping and peeling raw pumpkin so I put half a pumpkin and whole carrots in and roasted for an hour. If you want it done faster, Chop the vegetables.
Once vegetables are cooled. Peel and chop. Add vegetables and orange juice to thermomix bowl and puree 20 secs speed 8
Add remaining ingredients Cook 10 mins 90 degrees speed 2
