Ingredients:
4 eggs
80g low fodmap or gluten free flour
1/2 tsp minced ginger
1 tbsp soy sauce
1 carrot
2 spring onion tops
1/2 cabbage shredded (finely sliced)
1 tbsp oil
Method:
Put chopped carrot into mixing bowl
Grate 4 seconds, speed 5, remove and set aside
Insert butterfly whisk
add eggs
Whisk, 10 seconds speed 4
Add flour
Combine, 10 seconds speed 4
Remove butterfly whisk
Add soy sauce, ginger and pepper to taste
Mix, 20 seconds, speed 5
Combine all ingredients very well in a bowl
In a fry pan with the oil, cook 1/4 of the mixture at a time on a medium heat until golden.
Top with sliced spring onion.
It is also traditionally served with mayonnaise mixed with soy sauce
