This is one of the rare occasions that I'm going to give you some back story of why I created something. I used to host Low FODMAP cooking classes and I developed recipes for these. The hardest time I had developing a recipe was my bread recipe. This was before the low fodmap four I now use existed in supermarkets. I'm sure you are aware, just because a flour is gluten free, doesn't mean it's low fodmap. Many bean flours are high fodmap. All the recipes I had in cook books and online had bean flour added. I also hated the taste of these. Anyway here are my flour mixes that I came up with, which got amazing feedback in my classes. One man actually told me "You've given me bread back". Sweet/Savoury Flour mix:
2.5 cups Brown Rice Flour
1 cup Tapioca flour
1 and 1/4 cups potato starch
1/4 cup corn starch (corn flour)
2 Tbsp Xanthan gum
White Bread Flour:
1 and 1/3 cups white rice flour
1 1/3 cups Tapioca flour
1/3 cup corn starch
1/3 cup potato flour
2 Tbsp. Xanthan gum
Brown/seeded bread flour mix:
2 2/3 cups brown rice flour
1 cup Tapioca flour
1 cup corn starch
1/3 cup potato flour
2 Tbsp. Xanthan gum
100 grams mixed seeds (pumpkin, sunflower, sesame seeds etc)
To make rice flour in your Thermomix:
250 grams at a time 1 - 2 mins speed 9 (brown rice takes longer).
