Dragon Noodles

Ingredients:

200g wide rice noodles

Boiling Water

1/2 yellow capsicum

Spring onion tops (1)

2 tbsp dairy free spread

1 tbsp brown sugar

1 tbsp soy sauce

Handful fresh coriander leaves

1-2 tsp chilli paste ( I used Sambal Oelek)


Method:

Place noodles into thermoserver covered with boiling water and lid for 8-1o mins


Roughly chop capsicum and spring onion and place into mixing bowl

Place coriander leaves into mixing bowl

Chop 3 seconds, speed 7

Scrape down sides of bowl

Add dairy free spread to the mixing bowl

Sauté, 3 mins, 100 degrees, speed 1


Add remaining sauce ingredients

Mix, 20 secs, speed 3.5


Drain Noodles, place back into the thermoserver and stir sauce through.
