Bananas in Coconut Milk

Still in Thailand.

Dessert time.


Serves 4

Note, 60g coconut milk without inulin is low fodmap, 120g has moderate amounts of sorbitol, but should be tolerated.

Ingredients:

1 can light coconut milk (make sure it doesn't have inulin added)

1 tbsp Brown sugar

2 firm bananas sliced (not over ripe)

Method:

Put coconut milk and sugar into the mixing bowl

Bring to the boil (I used the kettle function)

Add banana

Cook 5 mins 90 degrees, reverse, speed 1
