Ingredients: 1 tbsp garlic and onion infused oil Juice of 1 lemon 1 tbsp dried oregano 1/4 tsp salt 1/3 cup chopped pitted Green olive
2 chicken thighs 1/4 cabbage 1 yellow capsicum Tops of 4 spring onions 1/2 zucchini, chopped
Method: Preheat oven to 220 degrees Celsius Combine marinade ingredients and coat the chicken thighs with it.
Place all ingredients in a roasting pan Drizzle with garlic infused olive oil
Cook for 20 to 25 minutes until the chicken is cooked through Turn the vegetables half way through.
