Maple & mustard glazed ham



Ingredients:

  • 2-3 kgs Leg of ham

  • 3/4 cup water

  • 1 + 1/2 cups brown sugar

  • 1/2 cup vinegar

  • 1/3 cup maple syrup

  • 2 tbsp mustard

  • 1 tsp cinnamon

  • 1 tsp salt

Method:

  • Preheat your oven to 160 degrees celcius and place your ham (fatty side up) in a large baking dish with 3/4 cup of water. Cover the ham with foil and roast for 1 hour.

  • Meanwhile, place the rest of the ingredients into your mixing bowl, mix spoeed 4 for 1 minute. Set the glaze aside.

  • After an hour, take off the foil and peel off the rind. With a sharp knife, cut crisis crosses across the outside of the ham.

  • Generously brush the ham with glaze.

  • Bake for another 2 hours, brushing the meat with glaze again at the 1-hour mark and the 1.5-hour mark.

  • The ham is ready when the glaze has caramelized. Let the ham rest for 5 – 10 minutes before carving.
