Low Fodmap Stamppot

So I'm half Dutch and because of that I like weird mash vegetable combinations lol. its getting cold and I'm craving some warm comfort food!

But we had onion in everything and I love it! Raw onion in mashed potato dishes etc Also with sauerkraut (cabbage dish). But obviously this isn't fodmap friendly as I'm very sensitive to onion these days.


One of my favourite recipes on cookidoo is the warm cabbage dish because it reminds me of the Dutch flavours. So I've come up with my own version of a Dutch inspired stamppot based on this and a couple of other Dutch recipes.


Ingredients

2 potatoes

2 carrots

1/2 white cabbage

30g nuttelex lite

1 tbsp nuttelex lite

100g ham

Spring onion tops ( about 3 lots)

2 massel 7 vegetable stock cubes

2 tsp dried dill

1/2 tsp ground nutmeg

200g water


Method :

Fill bowl with 1.5 litres water

Chop carrots and potato and put in the simmering basket into the bowl

Chop cabbage and place in the varoma tray

Cook potatoes and cabbage

Varoma, 25 mins, speed 2.5


While cooking in a fry pan add spring onion tops and ham and cook till golden in the 30g nuttelex lite


Remove everything from the bowl

Place vegetables, water, crumbled stock cubes, and 1 tbsp dairy free spread

Mash for 10 secs speed 4

Add remaining ingredients and mix, 10 secs speed 3.5
