Ham, Potato & Leek Soup

The green tops of leeks are low fodmap, so buy the leafiest one you can.

Ingredients: 1 cup leek green tops roughly chopped 1 Handful garlic chives tops 1 bunch spring onion tops roughly chopped 35 g dairy free spread 800g potatoes roughly chopped 3 massel 7 chicken stock cubes, crumbled 750g water 250g lactose free milk 200g ham roughly chopped


Method: Place leek, spring onion and chive tops in bowl and chop 10 secs, speed 5 Scrape down sides of bowl Add spread, cook 5 mins, 100c, spd 1 Scrape down sides of bowl Add potatoes Cook 6mins, 100c, spd 1 Add water and stock cubes Cook, 20 mins, 100c, spd 2 Puree 45 secs, gradually increasing to spd 6 until smooth

Transfer to thermoserver Add ham to mixing bowl, chop 20 secs, spd 4.5

Add milk and ham to thermoserver and stir through Season with pepper

You could also use crispy bacon and garlic infused olive oil
