Easter Muffins

Easter muffins. (taste like hot cross buns)

15g cranberries are low fodmap

Tip: I add apple cider vinegar to the baking soda to take out the baking soda taste


12 muffins

220 calories each.


Ingredients :

2 cups low fodmap flour

4 tsp baking powder

1/2 tsp baking soda

160g melted nuttelex light

2 eggs

2/3 cup sugar

2 tsp mixed spice

2 tsp cinnamon

1 cup milk

1 cup dried cranberries


Steps:

Pre heat oven to 180 degrees Celsius

Soak the cranberries in hot water for 10 minutes then pat dry with paper towels

Place flour and baking powder in bowl

Mix 20 secs speed 3.5

Mix baking soda with the Apple cider vinegar

Add all ingredients into mixing bowl

Mix until well combined. About 30 secs speed 3

It is a dough texture


Put into lined baking tray

Bake 20-25 mins
