Makes 16 260 calories each
Ingredients: 1.5 cups warm water 1/2 cup castor sugar 1/4 cup olive oil 7g sachet dried yeast 1tsp salt 2 large eggs 700g lofo flour 4 tsps baking powder 1/4 cup lactose free milk
Cinnamon butter: 35g light dairy free spread 80g Brown sugar 2 tbsps cinnamon powder
Method: Place water, castor sugar, olive oil and yeast into mixing bowl. Warm 3 mins, 40 degrees, speed 1
Place remaining ingredients into bowl. Mix 10 secs, speed 4.5 Knead, 1 minute
Place on thermomix mat, wrap it around the dough and leave in a warm place for 15 mins.
Preheat oven 200 degrees. (I use fan forced)
Cinnamon butter: Place dairy free spread into the mixing bowl. Melt 3 mins, 40 degrees, speed 1 Add Cinnamon and brown sugar Mix, 10 secs, speed 2.5
Roll dough into a 1 cm thick rectangle, about 40cm on the longest sides Brush on the Cinnamon butter
Roll the dough into a log from the longest side and cut into equal pieces.
Arrange on a baking tin lined with baking paper, leaving a small gap. Let sit for 10 mins Brush top with milk.
Bake for 15-20 mins
