Berry Muffins

12 muffins

Ingredients:

200g low fodmap flour

2 large eggs

4 tsp baking powder

1/3 cup sugar

110g nuttelex lite or non dairy spread of choice

380g frozen or fresh blueberries or raspberries

2 tsp vanilla essence

1/2 cup milk

Method:

Preheat oven 180 degrees

Put all wet ingredients instead of the berries into the mixing bowl Mix 10 secs, speed 3

Place dry ingredients into mixing bowl Mix 20 secs, speed 3.5

Add berries and mix 10 secs speed 3-3.5

Pour batter into muffin tray Bake 180 for 25 mins (until brown)
