Ingredients:
280 g, Low Fodmap flour or gluten free flour
180 gram, nuttelex Lite or non dairy spread
70 gram, desiccated coconut
2.50 cup dry, Rolled Oats or quinoa flakes
100.00 g, chopped peanuts or macadamias
1 tsp (4.6g), Bicarbonate Soda
1 tsp(s), Vanilla Essence
1 cup(s), Packed Brown Sugar
3 tbsp, Maple Syrup
1 tbsp apple cider vinegar
Method:
Preheat oven to 180 degrees C
Place butter and maple syrup into the mixing bowl
Melt, 3 minutes, 50 degrees, speed 2
Combine the bicarbonate soda with 1 tbsp apple cider vinegar
Add all dry ingredients
Combine, 20-30 secs, speed 3.5 -4
Place tablespoon balls of mixture on your baking trays
Flatten with a spoon (we back of spoon to stop sticking)
Cook 12-15 minutes (the longer you cook, the crunchier they will get).
